Production: Picking and removal of the pistil by hand. Poached in red wine and olive oil. Drying on fig wooden planks for a week at a controlled temperature.
Tasting: Dark garnet red appearance. Uniform, intense and deep aroma. Reminiscent to wine and olive oil.
Properties: Very high colouring power. Highlight its cardiovascular properties.
Consumer tips: Closely linked to the Mediterranean cuisine, it is used for seasoning, colour and flavour to all kinds of dishes, including salads, cheeses, pasta dishes, fish and meat.
